Simple Crockpot Roast Beef
As a mom, entrepreneur, rancher, plus full-time employee for NDFB, I am busy, as many of you probably are as well! Quick, simple meals are a staple in our household. One of my go-to’s is a roast. It’s so easy and requires little thought.
I wake up and first thing I do is turn the crockpot on, add the roast and ingredients, and never look back until its time to eat supper! That way I can get everything going before my busy toddler wakes up which causes me to soon forget about everything else. Ask my family! They will tell you how forgetful I can be!
This week, I used a rump roast. Our Dry Creek Ranch roasts are approximately 2.5-3 lbs, so they fit perfectly in a regular sized crockpot. I add in the roast plus a beef bouillon cube and two cups of water. Next I add one can of coke, seasoned salt (Tastefully Simple is my all time favorite), pepper, Tom’s Steak Rub (www.faithfamilyandbeef.com), chopped garlic, onion, and potatoes. I then set the crockpot to low and let it slow cook for at least 10 hours. An entire family meal in one pot.
The roast will fall off the bone and melt in your mouth because its so tender. Plus we usually have leftovers that make great roast beef sandwiches for meals later in the week, so that’s a couple more meals that I don’t have to plan for! The less I have to think about what to make for a meal, the better!
Typically, I use the crockpot way more during the colder months, but on busy summer weeks, it is still a go-to for me! Its one meal even my toddler scarfs down because its so good, so I can’t complain about that!
